Blueberry Muffins: The Ted Kord Edition
Ted Kord is my favorite Blue Beetle, probably because I'm just kind of old and not REALLY old. I do like the idea of Dan Garrett and I appreciate Jaime Reyes, but Ted Kord was prime 90s DC Comics to me.
That all said, what does Ted Kord have to do with blueberry muffins? Absolutely nothing. I just needed something "blue". And this affords me some kind of future ability to do "old fashioned" and "modern" blueberry muffins in the future.
Ingredients
- all-purpose flour - 2 cups
- granulated sugar - 1 cup
- baking powder - 2 tsp
- salt - 1 pinch
- eggs - 2
- butter, melted - 0.5 cups
- milk - 0.5 cups
- vanilla extract - 1 large splash
- cinnamon - 1 shake
- lemon zest - 1 lemon's worth
- blueberries, fresh - 1 lbs
Instructions
- Rinse and drain blueberries.
- Preheat oven to 400 degrees F.
- Coat muffin pan with cooking spray.
- In large bowl, whisk dry ingredients.
- In medium bowl, whisk eggs and wet ingredients plus the lemon zest.
- Mix medium bowl into large bowl.
- Don't over whisk, but make sure there are no clumps of dry flour.
- Fold in blueberries.
- Distribute batter into muffin pan.
- Bake 18 to 22 minutes; muffins should poof back up after you pat them.
- Cool, remove, and eat.
